Baking Time : 20 to 25 mins
Makes: 6 to 8 cupcakes
Ingredients
Unsalted Butter - 1/4 cup (50 grams)
Brown Sugar - 1/2 cup (100 grams)
Vanilla Essence - 1 tsp
Orange Juice - 2 tblspn
Yogurt / Curd - 2 tblspn
All Purpose Flour / Maida - 1 cup (120 grams)
Baking Soda / Cooking Soda - 1/2 tsp
Baking Powder - 1/2 tsp
Cinnamon Powder - 1/2 tsp
Dried Fruits - 3/4 cup soaked (recipe here)
(My 1 cup measures 240 ml)
Method:
Preheat oven to 180 degree C. Prepare a muffin pan by lining it with cupcake wrappers and set aside.
Take butter, sugar and vanilla in a bowl and cream well.
Add in yogurt and orange juice and mix well.
Add in soaked dried fruits and mix well.
Add in flour, cinnamon, baking soda and baking powder and fold gently.
Use a icecream scoop to scoop the batter into the moulds.
Bake it for 20 to 25 mins. Insert a toothpick to check whether the cake is done or not.
Now remove it and cool completely.
Serve.

squeeze in some orange juice |
mix well |
it may look curdled, but dont worry |
add in the soaked dried fruits |
mix well |
add in flour |
add in cinnamon |
add in baking soda and baking powder |
fold gently |
use a icecream scoop to scoop out the batter |
fill your muffin cases |
Sprinkle top with more dried fruits, this is optional, i found that the dried fruits like raisans burned a little on top |
bake till done |
