All those christmas fruit cake lover will be starting to soak their dry fruits a year before christmas. The longer the fruits steep in rum the more flavourful it will get.
You can use any dried fruits and any quantity you like. But make sure you add lots of raisans, since it makes your cake dark and yummy.

Preparation Time : 10 mins
Ingredients:
Raisans - 2 cup
Sultanas - 1 cup
Dates - 1 cup chopped
Tutti Fruity - 1 cup
Dried Cranberries - 1/2 cup
Cherries - 1/2 cup chopped
Prunes - 1/2 cup chopped
Currants - 1/2 cup chopped
Dried Apricots - 1/2 cup chopped
Mixed Nuts - 1 cup (optional- cashews, walnuts, almonds)
Rum or Wine - 2 to 3 cup
Method:
Take all dried fruits and nuts in a bowl.
Pour over wine or rum and mix well.
Store this in a air tight container or glass jar in a dark place for a year. The fruits should be completely covered in alcohol if you are soaking it for longer time.
Give the bottle a shake every now and then. Top with more liquor as days pass, since the fruits will absorb the liquor a lot.
You can use the fruits from second day itself.
Notes:
1)You can soak the dry fruits over a year. Make sure you use a clean dry glass jar and make sure the dry fruits is completely immersed in alcohol.
2)You can top with more alcohol as days pass by, since the fruits will absorb the alcohol.
3)You can start using this in cakes from the second day itself. But leaving it to soak for a week give maximum flavour.
4)You can use Dark Rum, Brandy, Red Wine or any wine to soak the fruits.
5)Store this in a dry dark place.
6)Shake the fruits every other day for even distribution.
7)If you dont want to use alcohol, use orange juice to soak the fruits, in which case store the dried fruits in fridge and use in a couple of days.
