Pretzels are just amazing. They have this soft and chewy texture which is perfect. You can have it as it is or dipped in some mustard or something like that..

Preparation Time : 10 mins
Rising Time : 2 hours
Baking Time : 12 to 15 mins
Makes: 5 to 6 pretzels

Ingredients:

All Purpose Flour / Maida - 1 cup
Sugar - 1 tsp
Salt to taste
Dry Yeast - 1 tsp
Water as needed for boiling
Baking Soda - 2 tsp

Method:

Take yeast, sugar in a bowl, add warm water and let it sit for 5 mins till it activates.

Take flour, salt  in a bowl. Mix well.

Add the yeast water, extra water and mix well to a dough. Cover and let it rise for 1 hour till it doubles.

Now divide it into 4 balls.

Roll it into a log and shape like pretzels as shown in picture.

Now place it in a baking pan and leave to rise for 30 mins.

Preheat oven to 225 degree c.

Take water and bring it to a boil. Add baking soda and mix well.

Place pretzels in boiling water and let it poach for a 30 to 45 seconds on each side.

Remove to a oiled baking pan.

Brush the top with some milk or egg wash and sprinkle with some salt.

Bake for 12 to 15 mins.

Serve warm.

Olive oil is becoming a part in our cooking recently. It has so many health properties in them which benefits our over all body. Olive oil is rich in monounsaturated fats, helping lower your risk of heart disease. It may even benefit insulin levels and blood sugar control, and therefore potentially lower your risk of type 2 diabetes. Good-quality olive oil contains important vitamins and nutrients and is loaded with antioxidants. Not only it is used in cooking, it is also good for our skin and hair. 

Olive oil is rich in monosaturated fatty acids. Some benefits of this fat is reduces breast cancer risk, reduce bad cholestrol levels, weight management and belly fat.

Your Metabolic health indicates how healthy your body functions which includes digestion, circulation and excretion. Five metabolic risk factors are the increase in weight, low cholesterol level, high blood pressure and sugar level. 

For good metabolic health, 

1)Limit your sugar level.
2)Eat smaller portion of food through out the day.
3)Limit use of alcohol and salt.
4)Use Olive oil in daily cooking, Embrace mono unsaturated fatty acids (MUFA) as it is known as anti diabetics fat. Olive oil is good source of MUFA as it is easy to digest that other refined oil. 

5)Be physically active.


Olive oil goes well with indian food as well. For instance i made this khichdi using leonardo olive oil and it was delicious. Plus using olive oil instead of someother oil makes this protein rich khichdi even more healthy #iChooseHealth

Leonardo Olive Oil - 2 tblspn
Cinnamon - 1 small piece
Cumin Seeds - 1 tsp
Onion - 1 medium size chopped finely
Garlic - 4 cloves chopped
Ginger - 1 tblspn chopped finely
Peas - 1/2 cup
Potato - 1 peeled and chopped
Carrot - 1 chopped
Tomato - 1 chopped finely
Asafoetida / Hing / Kaya Podi - a pinch
Chilli Powder - 1 tsp
Coriander Powder - 2 tsp
Cumin Powder - 1 tsp
Turmeric Powder - 1 tsp
Garam Masala powder - 1 tsp
Salt to taste
Rice - 1 cup
Yellow Moong Dal - 1/2 cup
Water - 4 cups

Method:

Wash and soak rice and dal together. 

Heat olive oil in a pressure cooker, add cumin and cinnamon.

Add onions, ginger and garlic and saute for a min.

Add in tomatoes and mix well.

Add in asafoetida, spice powders and mix well.

Add veggies and toss well.

Add in salt and water and mix well.

Add soaked rice and dal and bring it to a boil.

Cover the pressure cooker and cook for 2 whistle. Turn the heat to low and cook for 5 mins. Turn off the heat and let the steam all escape by itself. Open the cooker and fluff the rice.


Serve with raita.
